Recipe: Smashed Red Potatoes

Ingredients:

  • 2 pounds small red potatoes, cut into chunks
  • 2 cloves garlic, peeled, sliced or pressed
  • 1 teaspoon salt
  • 2 tablespoons butter
  • 1/4 to 1/2 cup half-and-half or cream
  • Salt and pepper

Directions:

Boil water and salt in a large pot. Add potatoes and cook until tender, about 20 minutes. Remove from heat, drain well, and return to the pot. Add the butter, cream and garlic, and mash coarsely. Add salt and pepper to taste.
