Recipe: Sweet Potato Bread Pudding with Pecans
Ingredients
- 2 medium sweet potatoes, peeled, steamed and pureed
- 1/2 cup maple syrup or brown sugar
- 4 eggs
- 1 1/2 cups milk
- 1/2 cup heavy cream
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ground ginger or 1 tsp. chopped candied ginger
- 1/2 teaspoon salt
- 2 cups stale, crusty bread, cut into cubes
- 1/2 cup golden raisins (optional)
- 1/2 cup pecans (optional)
Directions
Whisk together all the ingredients except the sweet potatoes and the bread. Whisk in the sweet potato puree. Add the chunks of bread. Let stand for 5 mins. Pour into a buttered baking dish. Bake at 325°F for approximately one hour. The bread pudding is done when a toothpick inserted in the center comes out clean.
