Recipe: Sweet Potato Bread Pudding with Pecans

Ingredients

  • 2 medium sweet potatoes, peeled, steamed and pureed
  • 1/2 cup maple syrup or brown sugar
  • 4 eggs
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground ginger or 1 tsp. chopped candied ginger
  • 1/2 teaspoon salt
  • 2 cups stale, crusty bread, cut into cubes
  • 1/2 cup golden raisins (optional)
  • 1/2 cup pecans (optional)

Directions

Whisk together all the ingredients except the sweet potatoes and the bread. Whisk in the sweet potato puree. Add the chunks of bread. Let stand for 5 mins. Pour into a buttered baking dish. Bake at 325°F for approximately one hour. The bread pudding is done when a toothpick inserted in the center comes out clean.
